it’s Friday once again! (:

Friday = Cooking and Baking Day

and we love it!
cause we get to plan what we want to cook
and try new recipes!

Today I did the cooking.
both the main meal and dessert. hehe
and I’m really happy with how the food turned out.
and hopefully so were Cheok and my Baby. (:

I tried Gordan Ramsay’s recipes again

monk fish loves.

since we started watching The F Word.
we haven’t stopped trying the recipes.
every week.
we try and cook at least 1 or 2 recipes from any series.
and when we saw the episode on Monk Fish
we have been tempted to try it!
but we didn’t know if we could get Monk Fish at Victoria Market

for the past few weeks.
we didn’t see any sign of Monk Fish at all.
and trust me. we never stopped looking for it! hehe
but last Friday
we spotted it! hehe.
another name for Monk Fish is Stargazer haha.
so cute. (:

SO WE BOUGHT IT.
of course. haha
not even thinking it for the second time.
we just asked for a large piece.
and paid for it.

not cheap. but so worth it!

Have been posting desserts
and there are requests of recipes.
so I’m posting them today (:

Chocolate Souffle
(Recipe from The F Word Series)

Ingredients : 

25g of softened butter
Grated chocolate
 

Crème pâtissière
20g cornflour
200ml milk
200g dark chocolate, 70% cocoa solids, chopped
80g egg yolks

Egg white Mixture
200g egg whites
150g caster sugar

Steps :

1. Preheat oven at 180˚C/gas 4.

2. Brush 8 ramekins with the softened butter and chill it for 5 mins.
Then coat the ramekins with grated chocolate.

3. For the crème pâtissière, slake the corn flour with a little of the milk,
then gradually add the rest of the milk until you have a smooth mixture.
Pour into a small pan, and slowly bring to the boil,
stirring continuously.
Boil for 30 seconds then off the heat, add the chocolate and whisk until smooth.
Beat in the egg yolks until smooth before transferring to a bowl to cool

4. In an artisan mixer, whisk the egg whites to soft peaks.
Gradually start to add in the sugar, whisking well in between each addition.
Once all the sugar has been added, continue to whisk until you have a thick and glossy mixture

5. Add one third of the egg whites into the chocolate crème patisserie mixture and mix well.
Now add in the remaining egg white and gently fold into the mix.
Do not over work the mixture as it will become too hard and stiff

6. Divide the mixture between the ramekins.
Level the surface with a palate knife then bake for 6-8 minutes,
or until well risen and with a slightly wobbly centre.
Remove from the oven and dust with the remaining cocoa powder.
Serve immediately with a scoop of ice cream
(your favourite flavour!)

7. Chocolate souffle. DONE.

Hot Chocolate Fondant
(Recipe adapted from The F Word Series)


Ingredients : 
50g unsalted butter, plus extra to grease
2 tsp cocoa powder, to dust
50g good quality bitter chocolate (minimum 70% cocoa solids), in pieces
1 free range egg
1 free range egg yolk
60g caster sugar
50g plain flour
Icing sugar to dust
Vanilla ice cream to serve
Steps :

1. Preheat oven to 160˚C/Gas 2.

2. Butter two large ramekins, about 7.5cm in diameter,
then dust liberally with cocoa, shaking out any excess.

3. Slowly melt the chocolate and butter in a small bowl set over a pan of hot water,
then take off the heat and stir until smooth.
Leave to cool for 10 minutes.

4. Using an electric whisk, whisk the whole egg, egg yolk and sugar together until pale and thick,
then incorporate the chocolate mixture.
Sift the flour over the mixture and gently fold in, using a large metal spoon.
Divide between the ramekins and bake for 12 minutes.

5. Turn the chocolate fondants out on to warmed plates.
Dust the tops with icing sugar and serve with a spoonful of vanilla ice cream.

6. Hot chocolate fondant. DONE.

i love it when baby and I cook together.
and because we both had uni that ended really late last night
we went to the supermarket straight after I got home. (:
and tried to see if there was anything that would inspire us
and ideas just kept flying into our heads when we walk down the aisles.

we try to budget ourselves when we are at the supermarkets.
cause we can really go crazy. haha
so we would look at the specials
and see if there were anything good.
then we saw duck breasts which were on clearance $11 (use to be $15)
so we thought, why not?
a good reward after a not too good Monday.
So we got that, potatoes and broccolini.
and went to pay our picks

and after paying
we realise that the person at the counter keyed in $1 instead of $11 for the duck breasts!
OMG! hahaha
we were SUPER DUPER happy!
50cents for each person.
AWESOME.

just because I felt like baking more today
so I did. haha.
ideas were just flowing in my mind
and I was inspired to cook some yummy food (:

Since I met Ayeeba for a late breakfast this morning.
I decided to have a baked eggs frittata for tea.
and it is such a good thing to make when you have heaps of left overs.
just toss everything in
and you’re good to go!

Fantabulous dinner

Friday nights are always fabulous dinner nights.
Baby and I try new recipes to cook and bake.
just so to take the stress off that is induced from Uni or work.
and it always works! (:

So this week. Baby decided to make one of the dishes that I have been wanting to try :

Stuffed Chicken Legs with Pea and Broad-bean Risotto

It had alot of preparation before you actually get to sink your teeth into the yums.
So thank you for the effort sweets!

I ended quite late yesterday from Uni.
but had already planned to go to the gym with Siti
and so I didn’t go back on my word.
and we did! (:
and you know what was the best thing
and made me the luckiest girl in the world?
it’s when you reach home after a grueling exercise session (actually wasn’t too bad)
and smell the awesome yummy smell of dinner prepared by my baby (:
and very well know that dinner is going to be awesome!

and so it was (:

after watching so much F word (a Gordan Ramsay cook show)
we tend to try everything we could that he put up the recipes for.
so tonight. baby tried the

Dover sole with shrimp butter sauce

more peektures of the food. yums!
