Cinnamon Raisin Pecan Rolls

oops. I did it again. my cravings always gets the best of me. haha (: Well but after seeing how this turned out. I have no regrets whatsoever. Just need to include more exercising in my daily routine, and I am safe! haha.

This is a Rachel Ray recipe. When I am back in Singapore and wake up early in the morning, I would always turn the tv on and catch the Rachel Ray show. I find it really amazing how she can always whip up something delicious and she does it with interesting themes : all things that are from a bottle, or leftovers, or practically anything! Her ability to make or bake something yummy is endless! So when I decided to try another recipe for these delicious little things, and saw that she has a recipe online, I couldn’t not try it!

Sorry I didn’t manage to take step to step photos. I was busy watching tv shows as I was baking these! But I followed the recipe to the tee, and trust me it’s one you would wanna dive right in to! (:

I used two different sized pans. One is a 20X20 square pan and a 18cm round pan. I personally loved how the buns turned out in the round pan. I thought it looks just like a flower. A yummy one, indeed. haha

and I didn’t burn it this time! (: The colour on the rolls were just gorgeous! Was so happy when I took them out of the oven! hehe

So give this recipe a shot as well as the other and let me think which u prefer!

Cinnamon Raisin and Pecan Rolls (Adapted from Rachel Ray Mag.com)

Ingredients :

½ ounce dried yeast (2 envelopes)
½ cup warm water
¾ cup plus 3 tablespoons milk
7 tablespoons unsalted butter, melted
¾ cup granulated sugar
1 large egg
1 teaspoon salt
4 to 4½ cups all-purpose flour
1 cup light brown sugar
2 tablespoons ground cinnamon
1/2 cup raisins + 1/4 cup chopped pecans (optional)

Steps :

1. Combine the yeast and warm water and set aside for 10 minutes.

2. Warm 3/4 cup of the milk in the microwave. In a large bowl, combine 4 tablespoons of the melted butter and the warm milk. Using an electric mixer with a dough hook at low speed, or a wooden spoon, slowly stir the dissolved yeast into the butter and milk. Add ½ cup of the granulated sugar, the egg and the salt, and mix until combined. Add 4 cups of the flour, ½ cup at a time; mix until smooth. If the dough is sticky, add up to ½ cup of flour.

3. Knead the dough on a floured surface for 5 minutes, place in a medium bowl and cover with plastic wrap. Let rise until doubled in size, about 1 hour.

4. Stir together the brown sugar, the remaining 1/4 cup of granulated sugar and the cinnamon. On a floured surface, roll out the dough to form a 12-by-24-inch rectangle. Brush the remaining 3 tablespoons of melted butter over the dough, and sprinkle the brown sugar mixture on top. Scatter the raisins over the dough.

5. Starting with a long side, roll the dough up into a log, jelly-roll style, then cut with dental floss or a sharp knife into generous 1-inch slices. Place in 3 greased 9-inch round cake pans (about 7 rolls per pan). Let the rolls rise for 45 minutes.

6. Preheat the oven to 350°. Bake the rolls, uncovered, until crusty and golden on top, about 25 minutes.

Grossi Florentino. (:

Just thinking about the food we had last night, makes me hungry and makes me smile. From the first course of bread and extra virgin olive oil, to the ever famous Tiramisu for dessert. Everything was just perfect. and the icing on the cake? Meeting Guy Grossi himself! I never knew he worked there and would appear in the restaurant, going around to every table and asking if we enjoyed our meal. His humility, touched me. And baby said, my smile was wider than when I saw Gordan Ramsay during the Good Food and Wine Show! haha

once we were seated, we were greeted with warmth, bread and the best quality of extra virgin olive oil and some olives!

and super duper long bread sticks that were super yummy!

i think we enjoyed the bread and bread sticks too much, finished them all! (:

Tortellini di aragosta

Peggy told me that the Lobster Tortellini was a MUST. and so I did! (: And boy was I glad I listened to her. hehe it was SO GOOD! The burnt butter sauce complimented it so well.

I could definitely have more! (:

Ceviche di capesante

Baby had the scallop ceviche and I knew the reason why he ordered it. It’s cause he knew I love raw scallops. (: That’s how lucky I am. He would order something just cause he knew it’s something I like, and there’s more than 1 thing I wanted to try on the menu hehe. Thanks sweetie! (:

Anatra al vinsanto

yes. I know. it looks amazing. (: Simply put : Duck confit with roast duck breast and a mushroom tart.

breaking them down to the three separate components –

duck confit – with the meat falling off the bone. superb. really superb.

Roast duck breast – Perfectly cooked with crispy skin that was just full of flavour.

Mushroom tart. Just about the best tart I’ve had. The crust had a cheesy taste and just melts in your mouth.

Baby’s aged rib steak that was so well cooked that it didn’t even need a sauce to company it.

it’s so good, it’s worth another look! (:

Patate all’Italiana

a perfect side to go with our mains : Fried potatoes with rosemary and garlic

I loved how they serve this dessert. It came our in a huge bowl, and was served table-side.

Turning 24 : Part 1

Birthdays spent in Melbourne has always been a small thing. Just dinner with Baby and meet up with some close friends after for drinks! But this year, it’s a little different. Cause baby had to work in the evening and by the time he finishes it would be too late to have a proper dinner, we had lunch instead! Then had dinner and drinks with the close friends! (: In other words, I had a super awesome day with the company of all my good friends! hehe so the happiest girl this birthday, is ME!

so as not to drown you all with photos of food and make you all super hungry. I’ve decided to split my celebrations into two posts! hehe

the first place : Shoya

we revisited this place after we celebrated my 22nd birthday (: a place full of memories! Good one indeed. and if you are craving for good japanese food, this is it. The best place to go! hehe and boy was I glad we did.

we ordered the set lunch and I love how they give small portions of everything. but at the end of the meal, we were stuffed! but very happy-stuffed. haha

so this was what we had in our set lunch

our appetizer is cabbage and crab meat with vinegar. It’s really good! The sourish taste of the appetizer just makes us look forward to filling our tummy up! hehe as my mum would say, it’s very 开胃! hehe first dish, and we were already singing their praises. haha Can you imagine how happy we were once the whole meal was over? (:

and what’s a japanese meal without chawanmushi? hehe

and to go with our meal, hot sakae of course. (:

and the sashimi course is something I look forward to everytime we come here. So fresh and good. And hidden behind the cucumber is my favourite : raw scallop! LOVE IT! hehe I learnt my dearest baby and left the best for last!

their signature : mushroom and quail egg tempura with crab and scallop wrapped in filo pastry. this made both of us smile after we bite into it, especially the filo pastry bit. SO GOOD! hehe

how good does this look? it tastes as good as how it looks or even better! hehe the beef was tender, the flavours just explodes in your mouth. Then the aftermath is just, wide grins on our face! hehe

Next stop : White Rabbit Record Bar

There’s this cosy little place in Kensington Town and I have been wanting to try it for the longest time! So I decided to head there and give their food a try, as well as enjoy the ambience and company (:

and what’s so special about this place? It’s a bar and cafe filled with old records! It’s so cute! I loved it immediately after stepping foot into the place.

the food was yummy, the service was awesome! By the time baby got here, the boss said the kitchen was closed. but when she realised he was going to drink on an empty stomach, she said she felt bad and asked him to order a sandwich, she would make it her him! We decided that we were going to make that our usual hanging out spot! hehe it’s like a tango’s in Melbourne hehe

did I tell you? Baby’s got a job! One that he is really excited about and looking forward to start. A health club instructor. yes I know, it sounds weird. But really it’s just a name and he is in fact a gym instructor. haha. I think this sounds better! He took his first spin class this morning and is a personal trainer after which! (: I am very sure he will be awesome in this, cause he has been working out since forever and is also MY personal trainer in our garage, I mean, gym. haha

so CONGRATULATIONS sweetie! hehe

His training started last week and his shifts, I must say, is at the weirdest hours of the day. Not all the shifts, just one. haha 6-9am! Cause it’s a corporate gym hehe so he has to be there before they start work. So my poor baby has to be up at 430am during these shifts! But I guess, when you like a job, it doesn’t really matter what time you have to wake up. hehe

So I went to meet him after his training last Friday and he was so sweet to treat me to breakfast! And because he knew I have been craving for pancakes for the longest time, we were on the hunt for a place with pancakes besides Pancake Parlour. hah

so we walked to our favourite lane to have breakfast. and found The Quarter! (:

and yes! they have pancakes!!! hehe

yummmm. fluffy buttermilk pancakes with maple syrup and strawberries! Who’s a happy girl? hehe

and breakfast won’t be complete without a cup of chai latte!

baby ordered the big breakfast and it was a plate with everything : eggs, sausage, bacon, spinach,mushrooms and tomatoes!

it was a good spread and the scramble eggs are really yummy! though I do prefer mine to be creamy and soft. but this would also do! hehe

Pavlova : Revisited

I’ve always likes a good pavlova. Crispy on the outside and chewy on the inside.

I must admit, I try not to order it outside for a few reasons : it tends to turn out too sweet and the portions are TOO HUGE! haha. so I have been loooking for the best pavlova recipe, but failed to do it the first time. haha well. I didn’t fail just didnt turn out as well as I hoped it would. So I went on looking for another recipe and asked around for people’s opinions. I found a Donna Hay one, and as Laureen nicely puts it, nothing really goes wrong with a Donna Hay recipe (:

So while thinking what to bake on this nice and windy Sunday afternoon, my dearest baby requested that I made his favourite dessert, the pavlova of course. And how can I say no? hehe luckily, I have a stocked up pantry and I have eevrything I need for the Pavlova. hehe

I was thrilled to see how it turned out! It didn’t collapse until I put the knife through it and sliced it into pieces! Boy was I a happy girl (: *doing the same dance as when my Macarons had ‘feet’!*

Food Post : Triple Kahlua Surprise !

a while back, I made tiramisu for a mini housewarming that we had at our place. Of course, I bought I big bottle of Kahlua just in case for times like these! I am a bit fan of Kahlua and have always been wanting to try how it would be in cupcakes. Boy did I give it a good shot. I didn’t only have it in my cupcake, I had it in my filling and in my frosting! haha. Now it’s no wonder I named this the triple kahlua surprise yes?

I sourced around for recipes that people have tried and tweaked it a little, came up with my own ganache filling and buttercream frosting so I’m a happy girl (: I think it turned out really well and for once my frosting looks like those you can find in cupcake shops! Well definitely not perfect, but I’m just super happy that it kinda looks similar! haha

so the texture of the cupcakes were soft and when it is in your mouth it has the texture of a chewie brownie! So it is a little dense and quite similar to the texture of a souffle, a dense souffle. Possible due to folding in the stiff egg whites into the mixture at the end. The ganache really compliments the cupcake and the buttercream frosting makes it less rich so I think it’s a perfect match! (: Top it off with shaved chocolate and you have a yummy little dessert on a plate.

When you see the recipe, you might think it’s way too much Kahlua, but you barely taste any in the cupcake itself. The only thing that has the taste of it is the icing (which you can alter the amount you want) so really the amount I used in this recipe is just nice! So if you’re a big fan of Kahlua, try giving this little cupcake a shot! I’m very sure you won’t regret it!

Pasteis de Nata

in other words. Portuguese custard tarts. (: Yes! I tried making them again using another recipe (: hehe This time I had to cook the custard to make it thicker before filling the tarts up. I prefer this one as compared to the other. But this one doesn’t seem to caramelise the top as much so I cheated and used a blow torch! haha

The only thing I wasn’t able to do is to keep the pastry crispy long enough. After a few days in an air tight container, the tart goes all soft! So the only solution : finish all of them up within 2 days! haha

This recipe used puff pastry like I did before, and I still do prefer using puff pastry. I think it makes the tarts taste nicer. All the buttery goodness (:

Baked Meatballs

So I have been experimenting on different kinds of meatballs to go with my spaghetti.

You see, I am a HUGE fan of meatballs. I could have with anything or even have it on its own. When I head to Subway for a meal for example, I do not have to think about it, it would definitely be meatballs sub. haha When I head to IKEA, an order of meatballs is a must! (:

So it’s no wonder I am looking for the perfect meatball recipe. I’ve tried the Safeway’s Nana’s meatball recipe. Baby likes that one cause he says the lemon zest in the meatball brings out the taste when he’s having it with spaghetti. I, on the other hand, is not a big fan of having lemony flavour in my meatballs. So I continued my search of finding the perfect one!

I chanced upon this recipe as I was blog-surfing and it looked amazing and pretty sure it will taste amazing as well. So thank you Smitten Kitchen! It turned out really well, and we all loved it! hehe Being me, I took the recipe and tweaked it a little to see if it will turn out good. and this I did!
