we’re just obsessed.
I’m obsessed with the perfecting of a chocolate souffle
and my baby is just obsessed with the souffle itself. (:
and we are not shy to say it!
though I think my waist is going to suffer.
so the gym would be a must tomorrow.
(hold me to that. haha)
but before I go into details of the souffle I made tonight
(inspired by what I saw on Masterchef Australia)
let me share with you what I made for dinner tonight.
Yes. I’ve made it before.
but I think it’s way better tonight (:
and being me.
SUPER anal about presentation.
I think tonight’s one would win hands down.
Spiced Monkfish with broccolini and sauteed potatoes with thyme
this time I didn’t overcook the fish
and the broccolini was done just nice. (:
I cheat. I used Maggi sauce to fry the broccolini.
but I love how it tastes! hehe
don’t have to use alot.
but it’s super easy.
and it seriously goes well with broccolini.
NO KIDDING! hehe
so what do u think about the presentation?

okie. now to the indulgence of the night.
the chocolate souffle of course.
Because it’s Baking Friday.
I had to bake something.
but haven’t had any inspiration of late.
so I watched Masterchef and they made a chocolate and jaffa souffle
Not a big fan of jaffa.
I left it out.
so it’s just chocolate Souffle. for the second night in a row! haha
because I never had my souffle rise perfectly on the sides.
I was hoping this one would be it.
and IT WAS IT! hehe
it rose. perfectly.
i was super happy! hehe
and it was still nice and gooey in the center.
the way baby likes it. hehe
poke it in the middle and add a scoop of ice cream
match-made in heaven hehe
guess who’s the happiest girl on Earth?
*jumps*
awesome. and super easy as well! hehe
Ingredients :
120g of 70% dark chocolate
4 eggs, seperated
50g sugar, and extra to coat the ramekins
butter to coat the ramekins
Steps :
1. Preheat the oven at 200 degrees celcious.
2. Boil a pot of water and put a heat proof bowl over to melt the chocolate.
Make sure you don’t get any water in the chocolate, or it will be ruined.
Butter the ramekins with a brush and with upward strokes on the sides.
Coat the buttered ramekins with caster sugar.
3. Cool the melted chocolate and beat in the egg yolks.
IN another bowl, beat the egg whites with a bit of the sugar to get the meringue started.
Slowly add the rest of the sugar till you get stiff peaks.
4. Add 1/3 of the meringue mixture into the chocolate mixture until incorporated.
Then slowly stir in the rest of the meringue mixture gently.
5. Scoop the mixture into the ramekins slowly and carefully, not to get any on the sides.
Then bake it in the over for 10 mins.
6. Sift icing sugar over the top immediately after you’ve taken it out of the oven
and put a scoop of ice cream in the middle of the souffle.
7. INDULGE.
Chocolate Souffle. DONE!

Ha…saw this on Masterchef online just now which was taught last night…very inspired to try it…I save the links for the video and hope to try this soon :)……ice-cream is a great alternative than cream….

chocolate souffle
i have ben trying to work out the amounts of the souffle – how did u decide on 50g sugar?
and will it make 4 souffles or 6?
well done for having a go at the amounts
i cant understand why they wont put the amounts on the website – waiting for the book maybe? i made the ricotta lemon and thyme tortellini the other night – awesome!

basically i think the amount of sugar don’t really matter. it just alters the amount of sweetness.
I used 100g actually but found it a tad too sweet.
so 50g should be enough.
just beat it to make sure u get stiff peaks.
if u think u should add a bit more sugar.
u should just add it. (:
trail and error basically.
I made 4 souffles out of the batter.
2 medium sized ramekins
and 2 large.
so if ure using medium sized ramekins.
probably will make 6!
